  • 1 can (15 oz) black beans, rinsed and drained
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 tsp ground cumin
  • 4 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp extra virgin olive oil
  • 1 bell pepper, chopped
  • Fresh cilantro (optional)

Instructions

  1. Prep your ingredients by dicing sweet potatoes and chopping onion, garlic, and bell pepper.
  2. Heat olive oil in a large pot over medium heat. Sauté onion until translucent, about 5 minutes. Add minced garlic and cook until fragrant.
  3. Add diced bell pepper and sweet potatoes to the pot. Sprinkle cumin, stirring for about 1 minute.
  4. Pour in vegetable broth and diced tomatoes; bring to a gentle simmer.
  5. Cover the pot and let simmer for about 20 minutes or until sweet potatoes are tender.
