Description

Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz sliced mushrooms (button or cremini)
  • 10.5 oz can cream of mushroom soup
  • 2 cups frozen mixed vegetables
  • 4 cups mashed potatoes (homemade or store-bought)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat a splash of oil over medium heat. Sauté onions and garlic until translucent, about 3-5 minutes.
  3. Add ground beef and cook until browned; drain excess fat.
  4. Stir in mushrooms and frozen vegetables; cook until warmed through, about 5 minutes.
  5. Mix in the cream of mushroom soup until everything is well coated.
  6. Layer half of the meat mixture in a baking dish, followed by half of the mashed potatoes. Repeat the layers.
  7. Top with shredded cheese and cover with aluminum foil.
  8. Bake for 30 minutes, then remove foil and bake for an additional 10-15 minutes until golden brown.
