- 3 lbs chuck roast
- 4 medium carrots, chopped
- 2 lbs Yukon Gold potatoes, quartered
- 1 large onion, chopped
- 2 cups low-sodium beef broth
- 4 cloves garlic, minced
- 2 tsp fresh thyme, chopped
- 2 tsp fresh rosemary, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Gather all ingredients.
- Heat olive oil in a skillet over medium-high heat. Season the chuck roast with salt and pepper, then sear for 3-4 minutes on each side until golden brown.
- Sauté chopped onion and minced garlic in the same skillet until translucent (about 2-3 minutes).
- Transfer the roast to the slow cooker and surround it with potatoes and carrots.
- Pour in beef broth and sprinkle herbs on top.
- Cook on low for 8 hours or until fork-tender.
- Slice or shred the roast before serving with vegetables.
