  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup shredded Asiago cheese
  • 16 oz store-bought gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper. Sear for 6-7 minutes on each side until golden brown and cooked through. Remove and let rest.
  2. In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
  3. Pour in heavy cream and chicken broth, stirring continuously for 2-3 minutes until combined.
  4. Gradually add shredded Asiago cheese, stirring until melted into the sauce.
  5. Add uncooked gnocchi and fresh spinach to the skillet. Cook for an additional 3-5 minutes until gnocchi float to the top and spinach wilts.
  6. Slice rested chicken and place on top of the creamy mixture. Serve hot with extra cheese if desired.
