  • 1 lb fresh shrimp, peeled and deveined
  • 4 cups low-sodium chicken broth
  • 1 cup green peas (fresh or frozen)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onions and cook until translucent. Stir in minced garlic.
  2. Add Arborio rice to the skillet; toast for about two minutes until edges are slightly translucent.
  3. Gradually pour in half of the warmed chicken broth, stirring continuously until most liquid is absorbed.
  4. Continue adding broth gradually for about 15–20 minutes until rice is nearly cooked; stir in green peas.
  5. Once rice is al dente, fold in shrimp and cook until pink (about 3–4 minutes). Remove from heat; add Parmesan cheese and butter, stirring until creamy.
  6. Serve immediately, garnished with extra Parmesan if desired.
