Ingredients

  • 1 ½ cups chocolate graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 cup heavy whipping cream
  • 1 cup fresh or canned cherries, pitted
  • Dark chocolate shavings for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Combine crushed chocolate graham crackers and melted butter in a bowl until sandy.
  2. Press the mixture into a springform pan and bake for 10 minutes. Allow to cool completely.
  3. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and sour cream until fully combined.
  4. Blend in cocoa powder and vanilla extract.
  5. In another bowl, whip heavy cream until stiff peaks form; gently fold into the cream cheese mixture.
  6. Pour half of the filling over the cooled crust, layer with half of the cherries, then add remaining filling and top with more cherries. Refrigerate for at least four hours or overnight.
