Ingredients

  • 1 lb dried navy beans
  • 1/2 cup unsulfured molasses
  • 4 slices thick-cut bacon
  • 1 yellow onion, diced
  • 1/3 cup brown sugar
  • 1 tsp mustard powder
  • Salt and pepper to taste
  • 6 cups low-sodium broth or water

Instructions

  1. Rinse and soak navy beans overnight in water. Alternatively, boil for 2 minutes and let rest for an hour.
  2. In a large pot, cook bacon over medium heat until crispy. Remove bacon, keeping the fat in the pan, and sauté diced onion until soft.
  3. Stir in molasses, brown sugar, mustard powder, crumbled bacon, salt, and pepper.
  4. Drain soaked beans and add to the pot with broth or water. Stir well.
  5. Cover tightly and bake at 300°F for about 5 hours until beans are tender.
