  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sour cream
  • 1 cup white chocolate chips
  • 1 cup fresh raspberries
  • 2 tsp vanilla extract
  • 3 large eggs, room temperature
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 325°F (163°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  2. Bake the crust for about 10 minutes until golden brown, then let it cool.
  3. Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals until smooth.
  4. In another bowl, beat softened cream cheese and granulated sugar until smooth. Add sour cream, melted white chocolate, vanilla extract, lemon juice, and eggs one at a time until fully combined.
  5. Gently fold in half of the raspberries into the filling mixture, reserving some whole ones for decoration.
  6. Pour half of the filling into the crust; dot with remaining raspberries and swirl gently using a knife. Pour remaining filling over top evenly.
  7. Bake for 50-60 minutes until set but slightly jiggly in center. Let cool completely before removing from the pan and refrigerate for at least three hours or overnight.
