- 1 cup white chocolate chips
- 1 cup fresh raspberries
- 2 tsp vanilla extract
- 3 large eggs, room temperature
- 1 tbsp lemon juice
Instructions
- Preheat the oven to 325°F (163°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
- Bake the crust for about 10 minutes until golden brown, then let it cool.
- Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals until smooth.
- In another bowl, beat softened cream cheese and granulated sugar until smooth. Add sour cream, melted white chocolate, vanilla extract, lemon juice, and eggs one at a time until fully combined.
- Gently fold in half of the raspberries into the filling mixture, reserving some whole ones for decoration.
- Pour half of the filling into the crust; dot with remaining raspberries and swirl gently using a knife. Pour remaining filling over top evenly.
- Bake for 50-60 minutes until set but slightly jiggly in center. Let cool completely before removing from the pan and refrigerate for at least three hours or overnight.
