- In another bowl, mix sugar and vegetable oil until blended. Add buttermilk, eggs, vanilla extract, and red food coloring; stir until smooth.
- Gradually combine the dry ingredients into the wet ingredients using a spatula; mix until just combined.
- Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
