Ingredients

  • 2 ripe mangoes (about 2 cups pureed)
  • 1 cup full-fat coconut cream
  • 2 tbsp honey or maple syrup
  • 8 oz dark chocolate (high-quality)
  • 1 tbsp coconut oil

Instructions

  1. Peel and chop the mangoes into chunks. Blend until smooth in a food processor. Mix in coconut cream and honey for sweetness.
  2. Pour the mango mixture into popsicle molds, filling them three-quarters full. Insert sticks and freeze for at least 4 hours until solid.
  3. Melt dark chocolate and coconut oil together in a microwave-safe bowl, stirring until smooth.
  4. Carefully remove the frozen mango pops from molds, dip each into melted chocolate, allowing excess to drip off.
  5. Place on parchment paper and freeze again for 10-15 minutes until the chocolate hardens.
