  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar

  • 16 oz cream cheese, softened
  • 1 cup sour cream (full-fat)
  • 3 large eggs (room temperature)
  • 1 tsp pure vanilla extract
  • 1 cup eggnog (your favorite brand)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Combine graham cracker crumbs, melted butter, sugar, and pumpkin pie spice in a bowl. Press into the bottom of a springform pan.
  3. Bake crust for about 10 minutes until golden brown; let cool.
  4. Beat softened cream cheese until smooth. Gradually add sugar and mix well.
  5. Add sour cream; mix until combined. Incorporate eggs one at a time.
  6. Slowly add eggnog and vanilla extract while mixing on low speed until smooth.
  7. Pour filling over cooled crust and bake for 50–60 minutes until slightly jiggly in the center.
  8. Turn off oven and leave cheesecake inside with door ajar for 1 hour to cool gradually.
  9. Refrigerate for at least 4 hours or overnight before serving.
