  • 1 cup sour cream, room temperature
  • 1 cup apple cider
  • 2 tart apples (e.g., Granny Smith), diced
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter until moistened. Press firmly into the bottom of a springform pan.
  2. Bake the crust for about 10 minutes until golden brown. Let cool completely.
  3. In a mixing bowl, beat softened cream cheese until smooth. Add sour cream, granulated sugar, brown sugar, pumpkin spice, vanilla extract, and apple cider; mix until fluffy.
  4. Gently fold in diced apples. Pour filling into cooled crust and smooth the top.
