  • 1 cup granulated sugar
  • 1 ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 cup apple cider
  • 2 large eggs (room temperature)
  • ½ cup unsalted butter (softened)
  • ½ cup brown sugar
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • 2 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, granulated sugar, baking powder, cinnamon, and salt.
  3. Melt the butter and let it cool slightly. In another bowl, mix the melted butter with eggs, apple cider, and vanilla extract until smooth.
  4. Gradually combine dry ingredients into the wet mixture; fold gently until just mixed.
  5. Fill muffin tins two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean. Cool on a wire rack.
  6. For frosting, beat softened butter until creamy. Gradually add powdered sugar, brown sugar, and cinnamon until fluffy.
