Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt until combined.
  3. In another bowl, cream softened butter with both sugars until light and fluffy. Beat in eggs one at a time.
  4. Gradually mix in dry ingredients alternating with buttermilk until just combined. Fold in chopped apples and toasted pecans.
  5. Pour batter into the prepared pan and bake for 45-50 minutes or until golden brown.
  6. For the caramel glaze: Heat heavy cream in one saucepan; melt brown sugar and butter in another until bubbly. Stir in heated cream until smooth.
  7. Allow the cake to cool for 10 minutes before transferring it to a wire rack; drizzle with caramel glaze.
