- 3–4 boneless, skinless chicken breasts
- 8 oz fresh mozzarella, sliced
- 1 cup cherry tomatoes, halved
- 1 cup fresh basil leaves, torn
- 3 cloves garlic, minced
- 2 tbsp balsamic glaze
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the seasoned chicken for about 5 minutes on each side until golden brown.
- Add minced garlic and cherry tomatoes around the chicken in the skillet; cook for 1 minute until fragrant.
- Top each chicken breast with slices of mozzarella and bake in the oven for about 20 minutes until cooked through (internal temperature should reach 165°F).
- Remove from the oven and sprinkle torn basil over the top. Drizzle with balsamic glaze before serving.
