  • 1 cup fresh blueberries
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar (light)
  • 1/2 cup unsalted butter (cold, cubed)
  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. In a large bowl, whisk together flour, oats, granulated sugar, brown sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Gently fold half of the crumble mixture with blueberries, lemon juice, and zest.
  5. Press half of the crumble into the bottom of the prepared dish. Spread the blueberry mixture on top and finish with the remaining crumble.
  6. Bake for 35-40 minutes until golden brown. Allow cooling before slicing.
