- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar (light)
- 1/2 cup unsalted butter (cold, cubed)
- 1/2 cup rolled oats
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tbsp lemon juice
- 1 tsp lemon zest
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
- In a large bowl, whisk together flour, oats, granulated sugar, brown sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gently fold half of the crumble mixture with blueberries, lemon juice, and zest.
- Press half of the crumble into the bottom of the prepared dish. Spread the blueberry mixture on top and finish with the remaining crumble.
- Bake for 35-40 minutes until golden brown. Allow cooling before slicing.
