- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup sour cream
- 3 large eggs
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 2 cups fresh Granny Smith apples, peeled and diced
- ½ cup caramel sauce
Instructions
- Preheat oven to 325°F (160°C). In a bowl, combine graham cracker crumbs, melted butter, and 2 tbsp sugar. Press mixture into the bottom of a springform pan.
- Beat softened cream cheese in a large bowl until smooth. Gradually add in remaining sugar until fluffy.
- Mix in sour cream, then add eggs one at a time, followed by cinnamon and nutmeg until blended.
- Sauté diced apples in a skillet over medium heat with a little butter and brown sugar until tender (about 5 minutes).
- Gently fold sautéed apples into the cheesecake mixture. Pour over the crust.
- Bake for 50-60 minutes until the center is slightly jiggly. Cool completely before refrigerating for at least four hours or overnight.
