- 4 cups romaine lettuce (chopped)

- 1 cup cherry tomatoes (halved)

- ¼ cup pine nuts (toasted, optional)
Instructions
- Cook the tortellini in boiling salted water for 3-5 minutes until they float. Drain and rinse under cold water.
- While the tortellini cools, wash and chop the romaine lettuce and halve the cherry tomatoes.
- In a large bowl, combine cooled tortellini, chopped romaine, halved tomatoes, and croutons. Drizzle with Caesar dressing and toss to coat.
- Add freshly grated Parmesan cheese and toasted pine nuts if using. Gently mix until combined.
