  • 1 cup wild rice blend (pre-cooked)
  • 1 cup chopped fresh carrots
  • 1 cup frozen peas
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, add oil and cook chicken until golden brown (5-6 minutes per side). Remove and shred.
  3. Sauté carrots and peas in the same skillet for about 3-4 minutes.
  4. In a mixing bowl, combine chicken broth, heavy cream, onion powder, garlic powder, thyme, salt, and pepper until smooth.
  5. Mix shredded chicken, wild rice blend, and sautéed vegetables in the baking dish. Pour sauce evenly over the top.
  6. Cover with foil and bake for 30 minutes; remove foil and bake for an additional 10-15 minutes until bubbly and golden.
