  • 1 cup granulated sugar
  • 2 tsp baking powder

  • 1/2 cup unsalted butter, softened
  • 3 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 1/2 cup brown sugar
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In another bowl, cream the softened butter and granulated sugar until fluffy.
  4. Add eggs one at a time into the butter mixture; then stir in vanilla extract.
  5. Gradually mix in the dry ingredients along with sour cream until just combined.
  6. For the streusel topping, combine brown sugar, flour, cinnamon, and optional nuts in a small bowl. Cut in cold butter until crumbly.
  7. Layer half of the batter in the prepared pan, sprinkle with half of the streusel topping, add remaining batter and top with the rest of the streusel.
  8. Bake for 35-40 minutes or until golden brown and a toothpick comes out clean.
