Instructions
- In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until smooth.
- In another bowl, whisk together sifted flour and baking powder, then gradually add to the wet ingredients, stirring until just combined.
- Divide the dough into two equal portions, adding different food colors to each half until well mixed.
- Roll out each colored dough between parchment paper into rectangles about ¼ inch thick. Layer them and roll tightly into a log shape.
- Wrap the log in plastic wrap and chill for at least 30 minutes.
- Preheat oven to 350°F (175°C). Slice the chilled log into rounds about ½ inch thick and place on a lined baking sheet.
- Bake for 10-12 minutes or until edges are lightly golden. Cool slightly before dusting with powdered sugar.
