  • 1 cup sweetened coconut flakes (or unsweetened)
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 1 tsp vanilla extract
  • ½ cup chocolate (optional), for dipping

Instructions

  1. In a large bowl, mix softened cream cheese, powdered sugar, vanilla extract, and half of the coconut flakes until smooth.
  2. Cover and refrigerate the mixture for 30 minutes to firm it up.
  3. Scoop small portions and roll them into one-inch balls.
  4. Roll each ball in the remaining coconut flakes until fully coated.
  5. If desired, dip half of each ball in melted chocolate and place on parchment paper to set.
  6. Chill again for 15 minutes before serving.
