  • 2 lbs pork belly
  • 1 cup apple cider
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme, chopped
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp honey

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Score the skin of the pork belly in a crisscross pattern.
  3. Rub the pork belly with salt, pepper, and minced garlic; let marinate for at least 30 minutes.
  4. Heat a skillet over medium-high heat; sear pork belly skin-side down for 5-7 minutes until golden brown.
  5. Pour apple cider around the sides of the pork belly in the skillet.
  6. Transfer to the oven and bake for about 45 minutes until internal temperature reaches 190°F (88°C).
  7. Brush honey on top during the last 10 minutes of baking for added sweetness.
  8. Let rest before slicing and serve hot.
