Description

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter (room temperature)
  • 3 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries (plus more for garnish)
  • 1 cup heavy cream (cold)
  • 2 cups powdered sugar (sifted)
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two heart-shaped baking pans with butter and dust with flour.
  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy. Beat in eggs one at a time, followed by vanilla.
  4. Gradually mix in dry ingredients alternating with milk until just combined. Gently fold in the raspberries.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Cool in pans for 10 minutes before transferring to wire racks to cool completely.
  7. Whip heavy cream until soft peaks form, then gradually add powdered sugar and lemon zest while continuing to whip.
  8. Once cooled, frost between layers and on top and sides of the cake.
