  • 1 box (15.25 oz) Red Velvet Cake Mix
  • 24 Oreo Cookies (for crust and filling)
  • 16 oz full-fat Cream Cheese, softened
  • 1 cup Sour Cream (preferably full-fat)
  • 1 cup Granulated Sugar
  • 3 large Eggs, at room temperature
  • 2 tsp Vanilla Extract
  • 1/2 cup Butter, melted

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. Prepare the red velvet cake mix according to package instructions; bake in two 9-inch round pans for about 25 minutes until a toothpick comes out clean.
  3. Crush the Oreos into fine crumbs and mix with melted butter; press firmly into the bottom of the springform pan.
  4. Beat softened cream cheese until smooth; gradually add sugar, sour cream, eggs, and vanilla until well combined. Fold in roughly crushed Oreos.
  5. Layer half of the cheesecake batter over the crust, add one layer of red velvet cake, then more cheesecake batter followed by another layer of red velvet on top.
  6. Bake for 50-60 minutes or until edges are set with a slight jiggle in the center. Cool in the oven with the door ajar for an hour before chilling overnight in the refrigerator.
