- 24 Oreo Cookies (for crust and filling)
- 16 oz full-fat Cream Cheese, softened
- 1 cup Sour Cream (preferably full-fat)
- 1 cup Granulated Sugar
- 3 large Eggs, at room temperature
- 2 tsp Vanilla Extract
- 1/2 cup Butter, melted
Instructions
- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
- Prepare the red velvet cake mix according to package instructions; bake in two 9-inch round pans for about 25 minutes until a toothpick comes out clean.
- Crush the Oreos into fine crumbs and mix with melted butter; press firmly into the bottom of the springform pan.
- Beat softened cream cheese until smooth; gradually add sugar, sour cream, eggs, and vanilla until well combined. Fold in roughly crushed Oreos.
- Layer half of the cheesecake batter over the crust, add one layer of red velvet cake, then more cheesecake batter followed by another layer of red velvet on top.
- Bake for 50-60 minutes or until edges are set with a slight jiggle in the center. Cool in the oven with the door ajar for an hour before chilling overnight in the refrigerator.
