  • 2 lbs Russet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, grated
  • 1 medium yellow onion, chopped
  • 4 tbsp unsalted butter
  • 1 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Slice the potatoes into thin rounds (about ¼ inch thick).
  3. In a skillet over medium heat, melt butter and sauté onions until golden brown.
  4. In a bowl, whisk together heavy cream, garlic powder, salt, pepper, and half the cheddar.
  5. Layer half the potatoes in the baking dish; pour half the cream mixture over them followed by half the sautéed onions. Repeat layers with remaining ingredients.
  6. Top with remaining cheddar cheese and bake for 45-55 minutes until bubbly and golden brown.
