- 2 pounds Yukon Gold potatoes, peeled and diced
- 1 cup full-fat sour cream
- 2 cups shredded sharp cheddar cheese (divided)
- 4 tablespoons unsalted butter, melted
- 1 packet onion soup mix
- Salt and pepper to taste
- 1 cup panko breadcrumbs
Instructions
- Preheat oven to 350°F (175°C).
- Boil diced potatoes in salted water until fork-tender, about 15-20 minutes. Drain and set aside.
- In a large bowl, mix drained potatoes with sour cream, melted butter, onion soup mix, salt, and pepper until slightly chunky.
- Stir in half of the cheddar cheese. Layer half of the potato mixture in a greased baking dish. Top with remaining cheese and then layer the rest of the potato mixture.
- Sprinkle panko breadcrumbs and remaining cheese on top.
- Bake uncovered for 30-35 minutes until bubbly and golden brown.
