  • 2 pounds Yukon Gold potatoes, peeled and diced
  • 1 cup full-fat sour cream
  • 2 cups shredded sharp cheddar cheese (divided)
  • 4 tablespoons unsalted butter, melted
  • 1 packet onion soup mix
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Boil diced potatoes in salted water until fork-tender, about 15-20 minutes. Drain and set aside.
  3. In a large bowl, mix drained potatoes with sour cream, melted butter, onion soup mix, salt, and pepper until slightly chunky.
  4. Stir in half of the cheddar cheese. Layer half of the potato mixture in a greased baking dish. Top with remaining cheese and then layer the rest of the potato mixture.
  5. Sprinkle panko breadcrumbs and remaining cheese on top.
  6. Bake uncovered for 30-35 minutes until bubbly and golden brown.
