- 2 lbs Yukon gold or russet potatoes
- 2 large sweet onions
- 1 cup Gruyere or Swiss cheese, shredded
- 1 cup heavy cream
- 2 tbsp unsalted butter
- 1 tsp fresh thyme (or dried)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Thinly slice the potatoes and onions.
- In a skillet, melt butter over medium heat and sauté onions until golden brown (about 15 minutes).
- Add heavy cream, thyme, salt, and pepper to the onions; simmer for 5 minutes.
- In a greased baking dish, layer half of the potatoes, followed by half of the onion mixture and half of the cheese. Repeat layers.
- Cover with foil and bake for 45 minutes; remove foil for the last 15 minutes until bubbly and golden.
