  • 4 boneless, skinless chicken breasts
  • 1 cup seasoned breadcrumbs
  • 2 cups cherry tomatoes, halved
  • 1 cup burrata cheese
  • 1/4 cup fresh basil leaves, chopped
  • 2 tsp garlic powder
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper.
  3. Set up a breading station: one plate with flour, one with beaten eggs, and one with seasoned breadcrumbs. Dredge each chicken breast in flour, then dip in eggs, and coat with breadcrumbs.
  4. Heat olive oil in a skillet over medium-high heat. Sear the chicken cutlets until golden brown, about 4-6 minutes per side.
  5. In a bowl, combine halved cherry tomatoes and chopped basil; season with salt and pepper.
  6. Transfer seared cutlets to a baking sheet. Top each cutlet with tomato-basil mixture and dollop burrata on top.
