  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 3 large eggs
  • 4 tablespoons unsalted butter

Instructions

  1. Preheat your oven to 375°F (190°C). If using store-bought tart shells, arrange them on a baking sheet.
  2. In a saucepan over medium heat, combine sugar and lemon juice; whisk until dissolved and fragrant.
  3. Remove from heat and whisk in eggs one at a time until fully incorporated. Stir in butter until melted.
