Warm up with a bowl of loaded potato soup, a delightful blend of creamy potatoes, crispy bacon, and gooey cheese. This easy-to-make dish is perfect for chilly evenings, offering rich flavors that evoke cozy family gatherings. Packed with hearty ingredients and topped with fresh chives, this soup is not just a meal; it’s an experience. Gather your loved ones and enjoy a comforting bowl that wraps you in warmth.

Ingredients

Scale
  • 4 medium-sized Russet potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded sharp cheddar cheese
  • Fresh chives or green onions for garnish

Instructions

  1. Prepare the ingredients: Wash and peel the potatoes, then chop them into cubes. Finely chop the onion and mince the garlic.
  2. Sauté the vegetables: In a large pot over medium heat, melt the butter. Add the chopped onion and sauté until translucent (about 5 minutes), then stir in minced garlic until fragrant.
  3. Add potatoes & broth: Toss in the cubed potatoes and pour in chicken broth. Bring to a boil over high heat, then reduce to simmer for 15–20 minutes until fork-tender.
  4. Create creamy goodness: Use an immersion blender to blend half of the mixture until smooth; return to pot with remaining chunky pieces for texture.
  5. Add cream & seasoning: Stir in heavy cream and season with salt and pepper to taste; let it simmer gently for another 5 minutes.
  6. Serve & enjoy: Ladle hot soup into bowls, topping each with crispy bacon bits, shredded cheese, and fresh chives.
