- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 large sweet potatoes (about 2 lbs), peeled and diced
- 1/4 cup pure maple syrup
- 1/4 cup Dijon mustard
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh rosemary, finely chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, whisk together maple syrup, Dijon mustard, olive oil, salt, pepper, and rosemary until smooth.
- Place the chicken breasts in a baking dish and coat with half of the glaze.
- In another bowl, toss sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet.
- Bake chicken and sweet potatoes on separate racks for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C) and sweet potatoes are tender.
- Brush remaining glaze over the chicken before serving. Assemble bowls with sliced chicken and roasted sweet potatoes.
