  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup cold butter (cubed)
  • 1/4 cup pumpkin puree (canned)
  • 1/2 cup granulated sugar (for filling)
  • 1 tsp ground cinnamon
  • 1 egg (plus one for egg wash)
  • 2 tbsp cold water
  • 1/4 cup maple syrup
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. In a bowl, combine flour and sugar. Cut in cold butter until crumbly. Stir in cold water and one egg until it forms a dough. Divide into two disks, wrap in plastic, and refrigerate for at least 30 minutes.
  2. Mix pumpkin puree, granulated sugar, cinnamon, and vanilla extract in a bowl.
  3. On a floured surface, roll each disk to about 1/8 inch thick and cut into rectangles.
  4. Place a tablespoon of filling on half of each rectangle, brush edges with beaten egg, fold over, and seal with a fork.
  5. Preheat oven to 350°F (175°C). Bake on parchment-lined sheets until golden brown (20-25 minutes). Let cool.
  6. Whisk powdered sugar with maple syrup until smooth and drizzle over cooled poptarts.
