- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 green onions, chopped finely
- 1 tsp chili powder
- Juice of 1 lime
- 1/4 cup fresh cilantro (optional)
Instructions
- Drain the canned corn thoroughly. Chop the green onions and set them aside.
- In a large bowl, combine softened cream cheese, sour cream, shredded cheddar and Monterey Jack cheeses, chili powder, lime juice, and green onions. Mix until smooth.
- Gently fold in the sweet corn until evenly distributed throughout the mixture.
- Taste and adjust seasoning with more chili powder or lime juice as desired.
- Transfer to a serving bowl and garnish with fresh cilantro if using. Serve with tortilla chips.
