  • 8 oz elbow or rotini pasta
  • 1 cup fresh sweet corn (or frozen)
  • 1 red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp freshly squeezed lime juice
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 1/2 cup feta cheese, crumbled
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. In a skillet, sauté fresh corn over medium heat for about 5-7 minutes until golden brown.
  3. In a bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper to create the dressing.
  4. In a large mixing bowl, combine cooked pasta, sautéed corn, diced bell pepper, cilantro, and feta cheese. Pour the dressing over and mix well.
  5. Cover and refrigerate for at least 30 minutes before serving.
