Instructions
- Preheat oven to 325°F (160°C).
 - Crush graham crackers and mix with melted butter. Press into mini cheesecake pans.
 - Beat cream cheese until smooth; add sour cream, sugar, eggs, and vanilla. Mix until well combined.
 - Spoon filling into crusts, leveling with the top.
 - Bake for 20-25 minutes until slightly jiggly in center. Cool at room temperature, then refrigerate for at least 4 hours.
