- 1 lb beef tenderloin
- 1 sheet puff pastry (thawed)
- 1 cup cremini mushrooms (finely chopped)
- 1 cup shiitake mushrooms (finely chopped)
- 2 shallots (finely chopped)
- 2 tsp fresh thyme (chopped)
- 1 egg (beaten for wash)
- Salt and pepper to taste
- 2 tbsp butter (for sautéing)
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, melt butter over medium heat and sauté shallots and mushrooms until golden brown, about 8 minutes. Let cool.
- Season the beef with salt and pepper, sear in a hot skillet for about 3 minutes per side until browned. Allow to cool slightly.
- Combine cooled mushroom mixture with fresh thyme in a bowl.
- Roll out puff pastry on a floured surface and cut into squares large enough to encase the beef.
- Place a scoop of mushroom filling on each square, top with beef, then fold and seal pastry edges with egg wash.
- Cut slits on top for steam escape and place on a parchment-lined baking sheet.
- Bake for 20-25 minutes until golden brown.
