  • 1 cup graham cracker crumbs
  • 5 tbsp unsalted butter (melted)
  • 1/4 cup granulated sugar
  • 1/2 cup key lime juice (freshly squeezed)
  • 1 can (14 oz) sweetened condensed milk
  • 3 egg yolks
  • Whipped cream (for topping, optional)

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom of muffin tins lined with cupcake liners.
  2. Bake the crusts for 8-10 minutes until lightly golden. Allow to cool.
  3. In a separate bowl, whisk together sweetened condensed milk, egg yolks, and key lime juice until smooth.
  4. Pour the filling into the cooled crusts without overflowing.
  5. Bake again for 10-15 minutes until the edges are set but the center is slightly jiggly. Cool at room temperature before refrigerating for at least one hour.
