Description

Irresistible Mini Pecan Pies are delightful bite-sized treats with a flaky crust and sweet, gooey filling bursting with nutty flavor. Perfect for any occasion!


Ingredients

  • 1 pie crust (store-bought or homemade)
  • 1 cup chopped pecans (lightly toasted)
  • 3/4 cup brown sugar (dark preferred)
  • 2 large eggs
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Roll out the pie crust to about 1/8 inch thick and cut out circles to fit into the muffin tin.
  3. Place about one tablespoon of chopped pecans in each crust shell.
  4. In a bowl, whisk together brown sugar, eggs, vanilla extract, and salt until smooth.
  5. Pour the filling over the pecans in each shell until nearly full.
  6. Bake for 20-25 minutes until golden brown and slightly puffed.
  7. Let cool before serving.
