- 1 cup chopped pecans (lightly toasted)
- 3/4 cup brown sugar (dark preferred)
- 2 large eggs
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- Roll out the pie crust to about 1/8 inch thick and cut out circles to fit into the muffin tin.
- Place about one tablespoon of chopped pecans in each crust shell.
- In a bowl, whisk together brown sugar, eggs, vanilla extract, and salt until smooth.
- Pour the filling over the pecans in each shell until nearly full.
- Bake for 20-25 minutes until golden brown and slightly puffed.
- Let cool before serving.
