  • 9 lasagna noodles (regular or gluten-free)
  • 2 cups fresh mushrooms, chopped
  • 3 cups fresh spinach
  • 1 ½ cups whole milk ricotta cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Sauté chopped mushrooms in olive oil over medium heat until golden brown, then add spinach and cook until wilted.
  3. In a bowl, combine sautéed vegetables with ricotta cheese, Italian seasoning, salt, and pepper.
  4. Spread filling on cooked lasagna noodles and roll tightly.
  5. Pour half the marinara sauce in the baking dish; place rolled noodles seam-side down.
