  • 1 medium yellow onion, finely chopped

  • 4 cups low-sodium vegetable broth

  • 2 tbsp unsalted butter
  • 1 tsp fresh thyme (or ½ tsp dried)
  • Salt and pepper to taste

Instructions

  1. Clean mushrooms under running water and slice evenly.
  2. In a large pot, melt butter over medium heat. Add onions and garlic; sauté until translucent (3-4 minutes).
  3. Add sliced mushrooms; cook until they release moisture and turn golden brown (5-7 minutes).
  4. Pour in vegetable broth, thyme, salt, and pepper. Simmer gently for 15 minutes.
  5. Blend the soup using an immersion blender until smooth. Adjust consistency with additional broth if desired.
  6. Stir in heavy cream and warm through without boiling. Taste and adjust seasoning before serving.
