  • 1 cup orzo pasta
  • 4 garlic cloves (minced)
  • 2 cups low-sodium chicken broth
  • 1/2 cup cherry tomatoes (halved)
  • 2 tbsp olive oil
  • 1 tsp fresh thyme (chopped)
  • 1 tsp fresh basil (chopped)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat chicken breasts dry; season generously with salt and pepper on both sides.
  3. In a large oven-safe skillet over medium heat, add olive oil. Sauté minced garlic until fragrant (about 30 seconds), then add seasoned chicken breasts. Cook until golden brown on one side (about 5-7 minutes).
  4. Flip the chicken, then pour in orzo and chicken broth. Stir to combine.
  5. Add halved cherry tomatoes and sprinkle with thyme and basil. Stir gently to mix all ingredients together.
  6. Transfer the skillet to the preheated oven; bake for about 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the orzo is tender.
  7. Remove from the oven, sprinkle with grated Parmesan, and let rest briefly before serving.
