- 4 tbsp unsalted butter
- 1 medium onion, finely chopped
- 2 stalks celery, finely chopped
- 2 cups low-sodium vegetable broth
- 2 tbsp fresh thyme, chopped
- 1/4 cup fresh parsley, chopped
- 3 cloves garlic, minced
- 1/4 cup toasted pine nuts (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large pot over medium heat, melt butter. Add onion and celery; sauté until soft (5 minutes).
- Stir in mushrooms and garlic; cook until tender (7 minutes).
- Combine torn sourdough, vegetable broth, thyme, and parsley in the pot; mix well.
- Transfer to a baking dish and cover with foil. Bake for 30-35 minutes until golden brown.
