  • 34 boneless skinless chicken breasts (about 1 lb)
  • 1/2 cup pesto sauce
  • 6 slices thick-cut bacon
  • 2 ripe avocados
  • 4 large whole wheat tortillas
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach or mixed greens
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or skillet over medium heat. Season chicken with salt and pepper, then grill for 6-7 minutes on each side until fully cooked.
  2. Remove chicken from heat, let it rest, and slice into strips. Coat with pesto sauce.
  3. In another skillet, cook bacon until crispy; drain on paper towels.
  4. Mash avocados with lemon juice, salt, and pepper.
  5. On each tortilla, layer spinach or greens, pesto chicken strips, crispy bacon pieces, mashed avocado mix, and halved cherry tomatoes.
  6. Fold sides of the tortilla in and roll tightly from one end to form wraps. Slice diagonally to serve.
