- 3–4 boneless skinless chicken breasts (about 1 lb)
- 1/2 cup pesto sauce
- 6 slices thick-cut bacon
- 2 ripe avocados
- 4 large whole wheat tortillas
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach or mixed greens
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat your grill or skillet over medium heat. Season chicken with salt and pepper, then grill for 6-7 minutes on each side until fully cooked.
- Remove chicken from heat, let it rest, and slice into strips. Coat with pesto sauce.
- In another skillet, cook bacon until crispy; drain on paper towels.
- Mash avocados with lemon juice, salt, and pepper.
- On each tortilla, layer spinach or greens, pesto chicken strips, crispy bacon pieces, mashed avocado mix, and halved cherry tomatoes.
- Fold sides of the tortilla in and roll tightly from one end to form wraps. Slice diagonally to serve.
