  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter with the granulated and brown sugars until light and fluffy.
  3. Mix in the pumpkin puree and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, and pumpkin pie spice. Gradually add this mixture to the wet ingredients and gently fold until just combined.
  5. Stir in the chocolate chips and mini marshmallows evenly into the dough.
  6. Drop spoonfuls of dough onto prepared baking sheets, spaced about 2 inches apart.
  7. Bake for 12-15 minutes until golden around the edges but still soft in the center. Allow to cool slightly before transferring to wire racks.
