Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.
  2. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, ginger, espresso powder, and salt.
  3. In another bowl, beat melted butter and sugars until smooth. Add eggs one at a time, followed by pumpkin puree and vanilla.
  4. Gradually mix dry ingredients into wet mixture while alternating with milk until just combined.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Cool on wire racks before frosting with cream cheese frosting.
