- 2 tsp ground cinnamon
- 1 cup pumpkin puree
- 4 large eggs
- 1 cup granulated sugar
- 1 cup whole milk
- 1 can (14 oz) sweetened condensed milk
- 1 can (12 oz) evaporated milk
- 1 cup heavy cream
- 2 tsp pumpkin pie spice
- 2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a bowl, whisk together flour, baking powder, cinnamon, and pumpkin pie spice.
- In another bowl, beat eggs and sugar until fluffy. Stir in pumpkin puree and vanilla extract until smooth.
- Gradually add dry ingredients to wet mixture, folding gently until just combined.
- Pour batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean. Let cool completely.
- For the tres leches mixture, whisk together sweetened condensed milk, evaporated milk, and whole milk in a bowl.
- Poke holes across the top of the cooled cake using a fork and slowly pour the milk mixture over it. Cover and chill for at least two hours.
- Before serving, whip heavy cream with sugar until soft peaks form and spread over the chilled cake.
