  • 1 ½ cups graham cracker crumbs
  • ⅓ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 cups fresh Granny Smith apples, peeled and sliced thinly
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ cup salted caramel sauce (store-bought or homemade)
  • ½ cup sour cream, room temperature
  • 3 large eggs, room temperature
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Mix graham cracker crumbs and melted butter in a bowl until combined. Press into the bottom of a springform pan.
  2. Bake the crust for 8-10 minutes until lightly golden. Remove from oven and let cool.
  3. In a skillet over medium heat, combine sliced apples with sugar, cinnamon, and nutmeg. Cook for about 5-7 minutes until slightly softened; set aside to cool.
  4. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla extract, then incorporate eggs one at a time.
  5. Pour half the cheesecake batter over the cooled crust. Layer half of the cooked apples on top, followed by the remaining batter. Finish with another layer of apples.
  6. Bake for 50-60 minutes until slightly jiggly in the center. Turn off the oven and let it cool inside for one hour.
  7. Refrigerate for at least four hours or overnight before serving. Drizzle with salted caramel sauce before slicing.
