- 2 lbs boneless chicken thighs
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 large red onion, cut into large pieces
- 2 medium zucchinis, sliced into thick rounds
- 3 tbsp extra virgin olive oil
- Juice of 1 lemon
- 1 tsp garlic powder
- 1 tsp ground cumin
- Salt & pepper to taste
Instructions
- Prepare the marinade by whisking together olive oil, lemon juice, garlic powder, cumin, salt, and pepper in a large bowl.
- Cut chicken thighs into 1-inch cubes and chop the veggies into similar sizes.
- Toss the chicken and vegetables in the marinade until well coated. Cover and refrigerate for at least 30 minutes.
- Thread marinated chicken and veggies onto skewers alternately.
- Preheat grill to medium-high heat (about 400°F). Grill kebobs for 10-15 minutes, turning occasionally until chicken is cooked through (internal temp of 165°F).
- Allow kebobs to rest for a few minutes before serving with pita bread or rice.
