Ingredients

  • 2 lbs boneless chicken thighs
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 large red onion, cut into large pieces
  • 2 medium zucchinis, sliced into thick rounds
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • Salt & pepper to taste

Instructions

  1. Prepare the marinade by whisking together olive oil, lemon juice, garlic powder, cumin, salt, and pepper in a large bowl.
  2. Cut chicken thighs into 1-inch cubes and chop the veggies into similar sizes.
  3. Toss the chicken and vegetables in the marinade until well coated. Cover and refrigerate for at least 30 minutes.
  4. Thread marinated chicken and veggies onto skewers alternately.
  5. Preheat grill to medium-high heat (about 400°F). Grill kebobs for 10-15 minutes, turning occasionally until chicken is cooked through (internal temp of 165°F).
  6. Allow kebobs to rest for a few minutes before serving with pita bread or rice.
