Ingredients

  • 2 medium sweet potatoes (cubed)
  • 1/2 cup pecans or walnuts (toasted if desired)
  • 1/2 cup dried cranberries
  • 1/2 cup feta cheese (crumbled)
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions
